Bath canning time for pints tomato products: 35 MIN.
Bath canning time for quarts tomato products: 40 MIN.
It is recommended not to use cooking oils in home canning recipes,
like the Basil Marinara sauce, because it can turn rancid.
It can always be added at the time of use.

While many recommend discarding older home canned goods, I PERSONALLY choose to use my best judgement, and BRING TO A FULL BOIL FOR TEN FULL MINUTES,
as long as the product looks and smells okay, and was still SEALED. Do USE YOUR OWN BEST JUDGEMENT. SOME REFERENCES: Botulism poison is destroyed by high heat. Boiling fermented food for 10 minutes can destroy the botulism poison. Before eating home-canned tomatoes, foods containing home-canned tomatoes, or any home-canned foods that are low in acid, boil in a saucepan, even if you detect no signs of spoilage. At altitudes below 1,000 feet, boil foods for 10 minutes. Add 1 minute for each additional 1,000 feet of elevation. |
