Ropa Vieja

  • 3 TB oil
  • 3 cans jackfruit
  • 2 large onions thinly sliced
  • 1 of each large green red and yellow bell pepper, thinly sliced
  • 15 (whole head) cloves garlic minced
  • 1 TB dried oregano
  • 1 TB ground cumin
  • 1 TB smoked paprika
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon ground cloves
  • 1 teaspoon freshly ground black pepper
  • 1/2 cup apple juice
  • 1 cup veg broth
  • 1 pint canned tomatoes
  • 1 - 6 ounce can tomato paste
  • 6 bay leaves
  • 1 large carrot cut in half
  • 1 large stalk celery cut in half
  • 16 kalamata olives
  • 7 oz pimientos drained
  • 2 tablespoons capers rinsed and drained
  • 1/3 cup chopped fresh parsley, stirred in before serving.
