3 cans jackfruit
2 large onions thinly sliced

15 (whole head) cloves garlic minced
1 TB dried oregano

1/4 teaspoon ground allspice
1/4 teaspoon ground cloves
1 teaspoon freshly ground black pepper
1/2 cup apple juice
1 cup veg broth
1 pint canned tomatoes
1 - 6 ounce can tomato paste
6 bay leaves
1 large carrot cut in half
1 large stalk celery cut in half
16 kalamata olives
7 oz pimientos drained
2 tablespoons capers rinsed and drained
1/3 cup chopped fresh parsley, stirred in before serving.
