• 2 cups rice
  • 1/8 cup vegetable oil
  • 8 oz tomato sauce
  • 6 stems cilantro (optional)
  • 1 tsp minced garlic
  • 4 cups water or vegetable broth
  • 2 tsp miso paste
  • 1/2 tsp cumin
  • 1/2 tsp cumin seed

    Heat oil in large frying pan on medium heat. Add rice and cook until golden brown.
    When rice is brown, add broth, tomato sauce, miso, garlic, cumin.
    Stir and cover pan. Let simmer for 30-40 minutes or until there is no liquid left.
    Stir in cilantro before serving.
    Makes 7 cups.
