Soba Noodle Salad

Ingredients

  • 9.5 oz pkg soba noodles
  • 1 large or 2 small English cucumbers
  • 1 bunch scallions (green onions), chopped (about 3/4 cup chopped)
  • 4 radishes
  • 1/3 cup tahini
  • 2 tablespoons rice vinegar
  • 1 tablespoon finely grated fresh ginger
  • 1 tablespoon white miso (optional)
  • 2 teaspoons liquid aminos
  • 1 teaspoon toasted sesame oil
  • handful fresh cilantro, chopped
  • pinch red pepper flakes
  • 1/3 to 1/2 cup water
  • 2 tablespoons sesame seeds (preferably black)

    Cook noodles per package instructions. Slice cucumbers and scallions.
    Plend remaining ingredients for dressing.
