Whole Wheat Bran Spice Cake

  • 1 cup all purpose UNBLEACHED flour
  • 1 cup whole wheat flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 cup lime juice (could be orange or lemon. In it for the acid to puff your baking powders.)
  • 2 cups all bran (Soaked for about 20 minutes in the coconut milk to soften.)
  • 2 cups unsweetened coconut milk
  • 2 TB flaxseed meal soaked in 5 TB water for 5 minutes (your egg substitute)
  • 2 CUPS UNREFINED SUGAR (CAN USE LESS, or agave, honey, etc.)
  • 1/2 CUP olive OIL + 2 tsp olive oil for greasing pan
  • 12-18 pcs crystalized ginger as garnish, approx.
  • 1 1/2 teaspoons each: cinnamon and ginger
  • 1/2 teaspoon anise or fennel seeds
  • 1/4 teaspoon each: nutmeg, clove, black pepper
    Baked at 350, approx 45 minutes- 1 hour, may vary.

    OATMEAL/JUICE VARIATION
  • 1 cup all purpose UNBLEACHED flour
  • 1 cup whole wheat flour

  • 2 cups oatmeal
  • 2 cups orange mango juice
  • 2 TB flaxseed meal soaked in 5 TB water for 5 minutes (your egg substitute)
  • 1/2 CUP UNREFINED SUGAR (CAN USE MORE OR LESS, or agave, honey, etc. depending on your taste.)
  • 1/3 CUP olive OIL + 2 tsp olive oil for greasing pan
  • 1/2 cup raisins
  • 12-18 pcs crystalized ginger as garnish, approx.
  • 1 1/2 teaspoons each: cinnamon and ginger
  • 1/2 teaspoon anise or fennel seeds
  • 1/4 teaspoon each: nutmeg, clove, black pepper
