Mango Burfi
based on Vegan Richa
  • 1 c raw cashews
  • 1 c raw oatemeal
  • 1 c almond or coconut flour
  • 1/2 cup unrefined sugar
  • 1/2 tsp cardamom
  • 1 can mango puree
  • 2 TB agar agar

    Blend cashews, oatmeal, and almond flour to fine powder
    Add canned mango puree and 2 TB agar agar, stir, bring to boil 5 min.
    Pour into prepared 9" sq. casserole dish.
    Makes Square casserole pan.

    Cushaw Pie Burfi

  • 2 C raw almonds
  • 1 C oats
  • about 2 c cushaw
  • 1 TB cinnamon
  • 1 tsp each allspice, nutmeg, ginger, turmeric, clove
  • 1/4 cup unrefined sugar
  • 1/4 cup maple syrup

    Blend, heat on stovetop with 2 tb agar agar, 6 min boil
    Sprinkle top with 1 tsp sugar, put in oven on BROIL for about 5 min.
    Makes 9 squares
