Vegan Ginger Goji Berry Cookies

I added beet root powder for a red Christmas 'offset' for the green. :)
Bit more tart, from the goji berry, but makes a nice contrast.

3/4 cup tablespoons vegan butter
3 tablespoons almond butter
1 1/2 cups unbleached white flour
1 teaspoon beet root powder
1 tablespoon coconut milk (no fat)
1 tablespoon ginger
garnish with raw goji berry
3/4 cup ground raw sugar
Form into balls about an inch diameter, Press goji berry on top.
Bake approx. 15 minutes @350.
