Julia's Jam Cake Recipe

[Saving this very old recipe, before I lose it. I have yet to try a vegan version, or calculate nutrition info!]

  • 2 cups of flour
  • 1/2 cup cocoa
  • 2-egg equivalent
  • 2 cups unrefined sugar
  • 1 cup blackberry jam
  • 2 cups buttermilk (add 1 tablespoon vinegar to plant milk)
  • 2 teaspoons soda scant
  • 2 teaspoons cinnamon
  • 2 teaspoons clove
  • 1 teaspoon allspice
  • 1 teaspoon nutmeg
  • 1/2 cup of vegan butter

    Usually, bake at 325, about 45 min; test for doneness.

    SPICE CAKE

  • 1 cup sugar
  • 1/2 cup vegan butter
  • 1 cup sour milk
  • 1-egg equivalent
  • 1/2 teaspoon each allspice, clove, cinnamon, nutmet
  • 2 cups flour
  • 1 teaspoon soda

    Caramel Icing

  • 1/2 cup vegan butter
  • 1 cup vegan sugar
  • 2 cups powdered vegan sugar
  • 1/4 cup plant milk
  • 1 tsp vanilla extract

    Bring the butter and 1 cup sugar to boil in a saucepan over medium heat for 2 minutes. Add milk and bring back to boil. Remove pan from heat, let cool, stir in the powdered sugar and vanilla, mix until smooth. Frost cooled cake immediately.
