Peanut Butter No Bake Cookies

  • 1 2/3 cups rolled or quick oats
  • 1/2 cup peanut butter or allergy-friendly sub
  • 1/2 cup pure maple syrup, or agave
  • 3 tbsp melted coconut oil

    Refrigerate; Makes 20.




  • Since maple syrup requires refrigeration,
    it can make your coconut oil clump
    if you don't warm to room temp.

    I skipped the added salt;
    used a tablespoon to scoop.
    My recipe made 23.
    They remind me a little of those 'maple nut goodies' candies, but better, because they aren't as (disgustingly) sweet (to me).
    The peanut butter creates the perfect offset, but the maple is present! Yum!
    And, if you're someone who has to pay attention, skipping the salt didn't hurt the flavor one bit,
    but it took down the sodium content to half (was 40, which is already low, down to 20.)
