Arepas with Beans, Sweet Potato & Green Sauce

  • 2 cups precooked cornmeal* harina precocida
    (I used masa harina, but I intend to remake with this one.)
  • 2 teaspoons salt
  • 2 1/2 cups warm water
  • 1/4 cup oil for pan frying

    Mix the precooked cornmeal and the salt.
    Add the water and whisk remove any lumps, then stir until combined.
    Let the mixture rest for 5-10 minutes.
    Using your hands, divide the dough into 8 pieces.
    Roll each piece into a ball and flatten in gently to create a disk, about 1 inch thick.
    Heat 1/4 cup oil in a large heavy skillet over medium heat.
    Add the arepas and fry for about 6 minutes on both sides.
    The arepas should get a dry fried exterior without getting overly brown.
    Cut the arepas in half and stuff with your fillings!

  • 2 medium sweet potatoes, sliced into thin pieces and sautéed in 2 TB olive oil, 1/4 tsp salt, pepper

  • 1 avocado
  • 1 cup packed parsley and cilantro leaves (combined)
  • 1 jalapeno
  • 2 cloves garlic
  • juice of one lime (2 tablespoons)
  • 1/2 cup water
  • 1/2 cup olive oil
  • 1 teaspoon salt
  • 1/2 cup pistachios (you can sub other nuts)
