Black Bean and Corn Warm Salsa
with Corn Tortillas

  • 1 tablespoon olive oil
  • 1 diced red onion
  • 2 cloves garlic crushed
  • 1 small red pepper diced
  • 1 small yellow pepper diced
  • 1/2 cup frozen corn kernels
  • 15 oz can of black beans drained and rinsed
  • 1 tsp paprika
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • 1 jalapeņo finely diced, seeds removed
  • 1 1/2 tsp tomato paste
    (OR I find that organic ketchup adds a hint of sweetness.)
  • 1 tbsp cilantro finely chopped
  • 1/2 tsp salt
  • Makes approx. 4 cups, Serve hot or cold

    Corn tortilla

  • 2 cups masa harina
  • 2 tablespoons flaxseed meal
  • 1 + 1/4 cups water, approx

    Use 1/4 cup as measure, form into balls, toast on high heat griddle, makes 9

    Can also be cut apart, sprinkled with a few drops of oil and spices, and toasted to make a dipping chip!
