1 tablespoon olive oil
1 diced red onion
2 cloves garlic crushed
1 small red pepper diced
1 small yellow pepper diced
1/2 cup frozen corn kernels
15 oz can of black beans drained and rinsed
1 tsp paprika
1 tsp cumin
1/2 tsp chili powder
1 jalapeņo finely diced, seeds removed
1 1/2 tsp tomato paste (OR I find that organic ketchup adds a hint of sweetness.)
1 tbsp cilantro finely chopped
1/2 tsp salt |
Makes approx. 4 cups, Serve hot or cold

Corn tortilla
2 cups masa harina
2 tablespoons flaxseed meal
1 + 1/4 cups water, approx
Use 1/4 cup as measure, form into balls, toast on high heat griddle, makes 9

Can also be cut apart, sprinkled with a few drops of oil and spices, and toasted to make a dipping chip!
