Black Bean Tofu
from The Plant-Based Wok

  • 14 oz block of firm tofu, pressed
  • 2 tbsp neutral cooking oil
  • 3 scallions, or onions, cut into 2-inch pieces, white and green parts divided
  • 5 garlic cloves, minced
  • 3 dried red chilies, de-seeded
  • 1/4 cup dried fermented black beans, soaked briefly in water and drained
  • 1 large red bell pepper, cut into 1-inch pieces ~~~
  • 1/4 cup Black Bean Sauce

  • Slice Tofu

    Chop garlic

    Onion or shallot

    Fry Tofu

    Brown Tofu

    Remove tofu

    Fry Vegetables 2-3 minutes

    Add Black Beans

    Add browned tofu

    Black Bean Sauce

    Stir in 1/4 cup

    Makes about 4 cups
