Kidney Bean Curry

  • 2 teaspoons oil
  • 1/2 teaspoon cumin seeds
  • 2 bay leaves
  • 1 cup chopped onion
  • 1 or 2 green chillies
  • 1/4 tsp carom seeds
  • 1 2-inch knob of ginger, chopped
  • 6 cloves garlic
  • 1 teaspoon coriander
  • 1/2 tsp turmeric
  • 1/2 tsp cayenne
  • 1/4 tsp hing
  • 2 teaspoons garam masala
  • 1/2 tsp dried fenugreek leaves
  • 1 teaspoon dry mango powder
  • 1 quart tomatoes
  • 1 1/2 cups dried beans, soaked overnight and cooked
  • 2 1/2 cups water
  • lemon juice and cilantro garnish optional

    Heat oil, toast spices 1 minute
    Add tomatoes, cook about 10 minutes
    Add beans, cook 30-40 minutes.
