2 teaspoons oil
1/2 teaspoon cumin seeds
2 bay leaves
1 cup chopped onion
1 or 2 green chillies
1/4 tsp carom seeds
1 2-inch knob of ginger, chopped
6 cloves garlic
1 teaspoon coriander
1/2 tsp turmeric
1/2 tsp cayenne
1/4 tsp hing
2 teaspoons garam masala
1/2 tsp dried fenugreek leaves
1 teaspoon dry mango powder
1 quart tomatoes
1 1/2 cups dried beans, soaked overnight and cooked
2 1/2 cups water
lemon juice and cilantro garnish optional
Heat oil, toast spices 1 minute
Add tomatoes, cook about 10 minutes
Add beans, cook 30-40 minutes.
