Vegan Pad Thai with Peanut Sauce

Peanut Sauce
  • 3/4 cup peanut butter made with just peanuts + salt
  • 3 tbsp liquid aminos
  • 1-2 tbsp maple syrup
  • 1 tbsp toasted sesame oil
  • 2 tbsp rice vinegar
  • 1/2 cup warm water or vegetable broth to thin, as needed
  • 1/2 tsp ground ginger
  • 2 small cloves garlic finely minced
  • 1 tbsp lime juice
  • 1/4-1/2 tsp red pepper flakes

    Noodles Using Peanut Sauce

    Cook up some rice noodles, add some shredded cabbage, spring onions, carrot or bean sprouts,
    peanut sauce and garnish with fresh squeezed lime, crushed peanuts and fresh cilantro.
    Add browned tofu if you want some extra protein. Sprinkle with sesame seeds.

    I used almond butter, soba noodles, and frozen mix veg, because they were handy.

  • 1 9.5 OZ PKG SOBA NOODLES
  • 3 tsp liquid aminos
  • 1 tb toasted sesame oil
  • 2 tb maple syrup
  • 1/2 cup veg broth
  • 3/4 cup nut butter
  • 1 10 oz pkg mix veg
  • 1 tsp neutral oil for tofu fry
  • 1.5 pkg simple truth firm tofu (I get the pkg that is already halved.)
  • 2 tb white wine vinegar, 1 tb lime j, garlic, vinegar
  • Makes 10 cups
