2 teaspoons neutral oil
1 tsp mustard seeds
1 tsp cumin seeds
1/4 tsp fenugreek seeds
5 cups squash
1 teaspoon ground coriander
1 tsp garam masala
1/2 tsp salt
1/4 tsp turmeric
1/2 tsp cayenne
2 tablespoons sugar
1 tablespoon mango powder
[1/2 tsp chaat masala for garnish]
Add mustard seeds, cumin seeds, and fenugreek seeds to hot oil, toast for 1 minute
Add the squash, mix well, cover, and cook for 10 minutes.
Add remaining spices, mix well, reduce heat and cook covered for 20 minutes.
