CREOLE COLESLAW

A slightly tweaked version of Creole Coleslaw from Veg Kitchen

  • 3 cups shredded green cabbage
  • 2 cups shredded red cabbage
  • 1 cup grated carrot
  • 1 cup finely diced pineapple (fresh or canned)
  • 1 to 2 scallions, thinly sliced
  • 2 tablespoons sweet pickle relish
  • 6 tablespoons vegan mayo
  • 2 Tbsp Creole mustard
  • 2 Tbsp Creole seasoning
  • 1 Tbsp apple cider vinegar
  • 1 tsp sugar

    In a large bowl, mix together mayo, mustard,
    Creole seasoning, vinegar and sugar until well combined.
    Add in coleslaw mix and toss well.
    Refrigerate at least 30 minutes before serving.

    Serves well with Vegan Jambalaya.

    CONVENTIONAL COLE SLAW

    Note: For a more conventional cole slaw, a quick and simple recipe is to use
    1 whole head cabbage (either color, but red is more nutritious) & 1 lb. carrots, shredded
    1.5 cups Hellmann's VEGAN mayo, + one half cup BRIANNA'S POPPYSEED DRESSING
    Add celery seed to taste
    Per one cup approx: Calories: 202 Carb: 8 Protein: 1 Fat: 19 Sodium: 270 Fiber: 2
