Ingredients
3 tablespoons olive oil
1 1/2 cups water
1/4 cup extra-virgin olive oil, divided
1 small garlic clove, finely minced (I used 4)
2 scallions, finely chopped (I used 1 whole sweet onion)
1 teaspoon lime zest (I skipped)
1/2 teaspoon sea salt
3 tablespoons lime juice
Approx 1/2 cup finely chopped cilantro
pinch of red pepper flakes or ¼ diced jalapeño, optional
Cook rice for 20 minutes in water. Drain, and stir in remaining ingredients. Makes approx. 5 cups.
