Cilantro Lime Rice

based on Rainbow Plant Life

Ingredients
  • 3 tablespoons olive oil
  • 1 1/2 cups water
  • 1/4 cup extra-virgin olive oil, divided
  • 1 small garlic clove, finely minced (I used 4)
  • 2 scallions, finely chopped (I used 1 whole sweet onion)
  • 1 teaspoon lime zest (I skipped)
  • 1/2 teaspoon sea salt
  • 3 tablespoons lime juice
  • Approx 1/2 cup finely chopped cilantro
  • pinch of red pepper flakes or ¼ diced jalapeño, optional

    Cook rice for 20 minutes in water. Drain, and stir in remaining ingredients.
    Makes approx. 5 cups.
