BASIC BRAN MUFFIN

  • 2 cups unbleached flour
  • 2 tablespoon baking powder
  • 2 cups all bran
  • 2 cups oatmeal
  • 2 cups plant milk
  • 1/2 cup oil
  • 2 "flax eggs" (2 TB flaxseed meal, 5 TB water)
  • 1/2 cup sugar

    Soak all bran in the milk for 20 minutes or so.
    Also soak the flax meal in the water.
    Combine all ingredients, fill UNBLEACHED muffin cups, bake at 400, 20-30 minutes.
    Can be flavored with 2 tablespoons vanilla extract and a cup of blueberries,
    or a tablespoon of cinnamon, teaspoon nutmeg, and a cup of raisins, to taste.

  • Nutrition info based on my favorite, topped with 1/4 cup chopped pecans, and making 21 muffins.
